SIMMENTAL

BOS TAURUS from Switzerland is very tender and soft-tasting meat, for those who prefer a refined taste. Pairs with a light red, such as POLIPHONIA RESERVA or PERA GRAVE.

RUBIA GALEGA

BOS TAURUS from Galicia, strong and striking flavor. It needs to dry age for at least 30 days to reach the optimum flavor and softness. This meat has higher levels of protein and lower levels of saturated fat. We suggest paring it with rum-based drinks, such as Moscow Mule 54, or a single malt whisky such as LAGAVULIN 16.

STEAK 54

BOS TAURUS from the Iberian Peninsula or the Azores, meticulously selected. Our preferred cut is a Tomahawk weighing around 1.2 kg. It has a higher marbling level and is dry aged for 40 days minimum. We suggest pairing this with an aged rum, such as Plantation Trinidad or, for the ones wishing to break the rules, a bottle of Taittinger Brut.
